Naturalist Gordon Plague of the Science Center of New Hampshire has
called for Americans to eat more insects, stating, "If people in
this country started eating more insects then it would obviously cut
down on the need for beef and for chicken and other meats. And so when
that demand went down it would actually also lower the prices of those
foods."
Plague pointed out, "we also eat things, worse things, that are
relatives of insects like lobsters and shrimp, which are also
crustaceans like insects, but for some reason ... don't have that
stigma." Nevertheless, Plague admitted that getting Americans to eat
more insects would require a "sales job."
